Our Story

Out here in West Texas, cattle aren't just livestock - they're a way of life.

   Our journey begins long before the storefront doors open each morning. It starts in the pastures of West Texas with Espinoza Cattle Company, established in 2000 by Gilbert Espinoza on the outskirts of Denver City, Texas. Through dust storms, droughts, long days, and even longer nights, that small herd grew. What began as a small herd of Red Angus Cattle has grown into a diversified operation including Simbrah, Certified Black Angus, Akaushi (Red Wagyu), alongside our beloved Red Angus cattle - carefully raised with pride, purpose, and integrity. 

   As our ranch grew, so did our vision. Through EagleHead Ranch & Feedlot, we stay hands-on through the feeding and finishing process, to guarantee every animal is cared for the right way. We make sure our cattle are responsibly fed and finished to ensure quality, consistency, and exceptional marbling because we believe quality beef starts long before it ever reaches the cutting table. 

   That full-circle process led to the creation of Old E Prime Cuts - our family-owned meat market built to bring ranch-raised beef directly to our community. By overseeing the process from pasture to counter, we can stand confidently behind every cut we sell. Every steak in our case, every roast, every pound of ground beef tells a story. It's the story of early mornings, worn leather gloves, feed trucks, open pasture, and a family, with the help of dedicated cowboys, determined to do things the right way.

What We Offer


Grass-Raised & Grain-Finished.

    Why grass-raised and grain-finished? Grass-raised cattle develop naturally on pasture and supplemental forages, which supports overall health and strong muscle growth. Grain finishing during the final stage helps develop marbling - the intramuscular fat that gives beef its tenderness, juiciness, and rich flavor. This balance delivers the consistent, high-quality eating experience our customers and family expect. 

    Does grain-finishing mean lower quality? Not at all. Grain finishing is a traditional and widely respected practice in the beef industry. It enhances flavor and texture while still allowing cattle to be pasture-raised for the majority of their lives. 

    Are your cattle given hormones or antibiotics? No. Our beef is raised without added hormones and without antibiotics. We believe careful management and hands-on care are the foundation of producing honest, high-quality beef.
